Mushroom Casserole

Ingredients

  • 1 large chopped onion
  • 14 c butter
  • 2 eggs slightly beaten
  • 12 c light cream half and half
  • 2 8 oz cans sliced mushrooms
  • 12 tsp salt
  • 14 tsp pepper
  • 1 c finely crushed saltine crackers
  • 12 c Velveeta cheese cubed

Directions

  1. Preheat oven to 350
  2. Saute onion in butter drain mushrooms reserving 34 cup of liquid
  3. Combine eggs cream mushrooms and liquid spices and saltines add onion and cheese and mix well Pour into a greased 1 12-quart casserole
  4. Bake covered for 30 minutes
  5. Remove cover and continue baking for 30 minutes more
