Mushroom Casserole
Ingredients
- 1 large chopped onion
- 14 c butter
- 2 eggs slightly beaten
- 12 c light cream half and half
- 2 8 oz cans sliced mushrooms
- 12 tsp salt
- 14 tsp pepper
- 1 c finely crushed saltine crackers
- 12 c Velveeta cheese cubed
Directions
- Preheat oven to 350
- Saute onion in butter drain mushrooms reserving 34 cup of liquid
- Combine eggs cream mushrooms and liquid spices and saltines add onion and cheese and mix well Pour into a greased 1 12-quart casserole
- Bake covered for 30 minutes
- Remove cover and continue baking for 30 minutes more
