Mushroom Croustades

Ingredients

  • 24 thin slices white bread
  • 3 Tbsp minced shallots
  • 12 lb fresh mushrooms finely chopped
  • 1 c heavy cream
  • 1 Tbsp minced parsley
  • 12 tsp salt
  • 2 Tbsp butter softened
  • 14 c butter
  • 2 Tbsp flour
  • 1 12 Tbsp minced chives
  • 12 tsp lemon juice
  • 18 tsp cayenne pepper

Directions

  1. Preheat oven to 400
  2. Cut a 3-inch round from each slice of bread
  3. Brush inside of 2 miniature muffin tins generously with butter
  4. Gently fit bread rounds into each mold to form a cup Bake 10 minutes or until lightly browned
  5. Cool
