Mushroom Croustades
Ingredients
- 24 thin slices white bread
- 3 Tbsp minced shallots
- 12 lb fresh mushrooms finely chopped
- 1 c heavy cream
- 1 Tbsp minced parsley
- 12 tsp salt
- 2 Tbsp butter softened
- 14 c butter
- 2 Tbsp flour
- 1 12 Tbsp minced chives
- 12 tsp lemon juice
- 18 tsp cayenne pepper
Directions
- Preheat oven to 400
- Cut a 3-inch round from each slice of bread
- Brush inside of 2 miniature muffin tins generously with butter
- Gently fit bread rounds into each mold to form a cup Bake 10 minutes or until lightly browned
- Cool
