Mushroom Medley
Ingredients
- 1 c frozen peas
- 1 large onion
- 2 c medium size fresh button mushrooms
- 2 tsp margarine
- salt to taste
Directions
- Prepare each vegetable separately to obtain right texture
- In saucepan cook peas until nearly done
- Cover and set aside
- Slice onion thickly
- Cut each slice into eight pie-shaped pieces
- Cook in water until done but still firm
- Add margarine cover and set aside
- Wash mushrooms
- Stand on end and cut into quarters
- Boil hard until done
- Strain mushrooms and add to onions
- Add peas and enough juice that mixture can be simmered
- Add salt
- Simmer and taste
- Serve hot
