Mushroom Wine Sauce

Ingredients

  • 2 Tbsp butter
  • 2 Tbsp flour
  • 1 c chicken stock
  • 12 c dry white wine
  • 12 tsp tarragon
  • salt and pepper
  • 4 oz can mushroom pieces or 14 lb fresh sliced and sauteed for 5 minutes in butter
  • 12 c half and half
  • 1 egg yolk

Directions

  1. Melt butter in saucepan and add flour
  2. Cook without browning stirring constantly for several minutes
  3. Slowly add stock wine and spices Simmer several minutes and add mushrooms Simmer for 5 minutes Remove from heat and stir in creamed mixed with egg yolk
  4. Cook stirring until heated through Do not let boil
  5. May be made a day ahead and reheated
