Mushrooms A La Grecque

Ingredients
- 3 tomatoes cut up
- 2 c white wine
- 34 lb whole mushrooms
- freshly ground pepper to taste
- 1 bay leaf
- 1 Tbsp olive oil
- salt to taste
Directions
- Place tomatoes in a 1 12 to 2-quart casserole and add wine Cook over low heat 20 to 25 minutes
- Strain and discard liquid Add the mushrooms wash them first pepper bay leaf and olive oil to tomato pulp
- Cook 30 minutes over low heat
- Correct seasoning with salt and pepper
- Serve cold
- Serves 4
