Mussels In White Wine Sauce

Ingredients
- 2 lb mussels washed and debearded
- 1 small onion diced
- 1 small tomato peeled seeded and diced
- 1 Tbsp fresh chopped parsley
- 1 clove garlic chopped
- 14 c white wine dry
- 3 to 4 oz cold butter cubed
- salt and pepper
Directions
- Melt 1 tablespoon of the butter in large pot big enough to hold mussels
- Add onion and parsley
- Cook over medium heat until fragrant
- Add garlic and wine
- Cook about 1 minute
- Add mussels and tomatoes
- Cover and cook until mussels have opened 3 to 5 minutes
