Mussels In White Wine Sauce

Ingredients

  • 2 lb mussels washed and debearded
  • 1 small onion diced
  • 1 small tomato peeled seeded and diced
  • 1 Tbsp fresh chopped parsley
  • 1 clove garlic chopped
  • 14 c white wine dry
  • 3 to 4 oz cold butter cubed
  • salt and pepper

Directions

  1. Melt 1 tablespoon of the butter in large pot big enough to hold mussels
  2. Add onion and parsley
  3. Cook over medium heat until fragrant
  4. Add garlic and wine
  5. Cook about 1 minute
  6. Add mussels and tomatoes
  7. Cover and cook until mussels have opened 3 to 5 minutes
