Mustard-Cabbage Relish

Ingredients
- 3 large heads cabbage finely shredded
- 2 12 lb onions chopped
- 2 red bell peppers or 1 jar pimento
- 1 qt white Heinz vinegar
- 1 qt mustard
- 1 stalk celery finely chopped
- 5 lb sugar
- 12 box mustard seed
- 12 box pickling spices
Directions
- Shred
- cabbage
- Chop
- peppers celery and onions
- Put mustard seed
- and
- spices
- in
- a loose cheesecloth tied with a string or
- plasticwire tie
- Boil all ingredients in a large dishpan for
- 30
- minutes or until the cabbage is tender
- Stir as itcooks to evenly distribute the mustard
- Mix 12 cup of flour and
- 1
- cup
- of water to make a thin paste
- Add to mixture
- Stir until
- thickenedPour into jars rinsed with hot water and seal Especially good on hot dogs
