Mustard Greens With Straw Mushrooms

Ingredients

  • 3 to 4 head Chinese mustard greens
  • 3 Tbsp peanut vegetable or corn oil
  • 1 12 tsp sugar
  • 1 15 oz can straw mushrooms drained
  • 2 34 c chicken broth
  • 2 Tbsp cornstarch

Directions

  1. Discard tough outer leaves and cut off tough base end of each set of mustard greens
  2. Also remove the soft leafy portion leaving the firm center portions
  3. Cut these pieces into 1 12-inch lengths
  4. Wash and drain well
  5. Boil a small amount of water enough to later cover greens
  6. Add the greens
  7. Let the water return to a boil drain greens and drop immediately into cold water then drain well this blanching tenderizes the tougher mustard greens
