My Best Carrot Cake

Ingredients

  • 1 14 c cooking oil
  • 2 c sugar
  • 3 c flour
  • 2 c grated carrots
  • 4 eggs
  • 1 small can crushed pineapple
  • 2 tsp cinnamon
  • 3 tsp vanilla
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 c pecan pieces

Directions

  1. Add in large bowl the oil sugar eggs carrots pineapple and vanilla
  2. Stir by hand then add remaining ingredients and stir by hand again
  3. Bake in 2 round cake pans or a 9 x 13-inch loaf pan for 30 to 45 minutes at 325
