My Best Carrot Cake

Ingredients
- 1 14 c cooking oil
- 2 c sugar
- 3 c flour
- 2 c grated carrots
- 4 eggs
- 1 small can crushed pineapple
- 2 tsp cinnamon
- 3 tsp vanilla
- 1 tsp baking soda
- 1 tsp baking powder
- 1 c pecan pieces
Directions
- Add in large bowl the oil sugar eggs carrots pineapple and vanilla
- Stir by hand then add remaining ingredients and stir by hand again
- Bake in 2 round cake pans or a 9 x 13-inch loaf pan for 30 to 45 minutes at 325
