My Favorite Pasta-Garlic Clam Sauce
Ingredients
- 12 c chopped onion
- 12 c chopped green pepper
- 4 cloves garlic minced
- 2 Tbsp olive oil
- 12 lb mushrooms sliced
- 2 Tbsp chopped fresh parsley
- dash of cayenne
- 1 12 tsp dried thyme
- 2 7 oz cans minced clams
- salt and pepper to taste
Directions
- Saute onion green pepper and garlic in olive oil until translucent
- Add a little water and cover if necessary Add mushrooms and continue heating in covered saucepan for about 3 minutes
- Add remaining ingredients including all liquid from clams heat until hot in covered saucepan
- Serve with 1 cup spaghetti or linguine 2 ounces dry per serving
- Top with Parmesan cheese
