My Favorite Pasta-Garlic Clam Sauce

Ingredients

  • 12 c chopped onion
  • 12 c chopped green pepper
  • 4 cloves garlic minced
  • 2 Tbsp olive oil
  • 12 lb mushrooms sliced
  • 2 Tbsp chopped fresh parsley
  • dash of cayenne
  • 1 12 tsp dried thyme
  • 2 7 oz cans minced clams
  • salt and pepper to taste

Directions

  1. Saute onion green pepper and garlic in olive oil until translucent
  2. Add a little water and cover if necessary Add mushrooms and continue heating in covered saucepan for about 3 minutes
  3. Add remaining ingredients including all liquid from clams heat until hot in covered saucepan
  4. Serve with 1 cup spaghetti or linguine 2 ounces dry per serving
  5. Top with Parmesan cheese
