New Classic Potato Salad

Ingredients
- 1 bag (1 1/2 lb.) refrigerated, ready-to-cook red potatoes
- 1/4 c. mayonnaise
- 1/4 c. chopped kosher dill pickles
- 2 Tbsp. finely chopped shallot
- 1 Tbsp white wine vinegar
- 1/2 Tsp sugar
- 1/2 Tsp salt
- 1 Tsp olive oil
- 1 cup frozen whole-kernel corn, partially thawed
Directions
- Cook potatoes according to package directions. Drain in colander under cool running water, 30 seconds.
- Set aside.
