New Moon Tea Cakes

Ingredients

  • 12 lb butter
  • 1 12 c sugar
  • 6 egg yolks
  • 1 12 c sifted flour
  • 12 tsp salt
  • 1 12 tsp baking powder
  • 7 egg whites
  • 12 c ground walnuts
  • 2 Tbsp powdered sugar
  • 1 tsp vanilla

Directions

  1. Cream the butter and sugar well Add egg yolks and beat well about 5 minutes Sift flour salt and baking powder together and add in 3 parts to creamed mixture blending it well Add vanilla Clean beaters and beat egg whites in another bowl until stiff but not dry
  2. Pour on top of the batter and with spatula or rubber scraper fold in gently
  3. Grease a 9 x 13-inch pan Dust with flour
  4. Pour in batter and spread to corners
  5. Sprinkle with walnuts and bake at 350 for 25 to 30 minutes
  6. Lightly dust with powdered sugar while warm Cool and cut with a serrated round cookie cutter so you will have half moon shaped little cakes
