New Orleans Pecan Pie

Ingredients

  • 3 egg yolks
  • 1 c sour cream
  • 1 c sugar
  • 4 Tbsp corn starch
  • 14 tsp lemon extract
  • pinch of salt
  • 1 baked pie shell cooled
  • 2 egg whites
  • 1 c brown sugar
  • 1 c chopped pecans

Directions

  1. Mix egg yolks sour cream sugar cornstarch lemon extract and salt
  2. Cook in top of double boiler until thick
  3. Pour into pie shell
  4. Beat egg whites
  5. Add brown sugar slowly stir in pecans
  6. Spread over filling
  7. Bake until lightly browned
  8. Cool Refrigerate for several hours
