Nicaraguan Fried Rice

Ingredients
- 1 onion medium chopped
- 1 carrot grated
- 1 green pepper chopped
- 1 c rice
- salt to taste
- 2 Tbsp oil
- 1 tomato chopped
Directions
- Wash and drain rice
- Set aside
- In skillet heat oil and saute onion green pepper and carrot
- Add 2 cups water and salt on medium heat until rice is done
- Three minutes before spread chopped tomato on top
- When rice is done top with lid
