Nipponese Eggplant

Ingredients
- 2 Tbsp butter or margarine
- 3 medium onions thinly sliced
- 1 small eggplant
- 14 c soy sauce approximately
- 14 c water approximately
- 2 to 3 Tbsp light brown sugar
Directions
- Peel eggplant and cut into 12-inch to 34-inch cubes Meanwhile in a skillet fry onions in butter
- Add eggplant soy sauce water and brown sugar to onions
- Cover and simmer for 20 minutes
- Serves 3 to 4
