Ingredients

  • 2 Tbsp butter or margarine
  • 3 medium onions thinly sliced
  • 1 small eggplant
  • 14 c soy sauce approximately
  • 14 c water approximately
  • 2 to 3 Tbsp light brown sugar

Directions

  1. Peel eggplant and cut into 12-inch to 34-inch cubes Meanwhile in a skillet fry onions in butter
  2. Add eggplant soy sauce water and brown sugar to onions
  3. Cover and simmer for 20 minutes
  4. Serves 3 to 4
