No-Bake Blueberry Cheese-Pie
Ingredients
- 12 c sugar
- 2 Tbsp cornstarch
- 34 c cold water
- 3 c fresh blueberries
- 8 oz cream cheese
- 3 Tbsp confectioners sugar
- 1 tsp vanilla
- 1 graham cracker crust
Directions
- Mix sugar and cornstarch in saucepan
- Stir in water until blended
- Add 1 cup of the blueberries stir over medium heat until mixture thickens and comes to a boil
- Reduce heat simmer for 2 minutes stirring constantly until berries release their juices
- Remove from heat
- Stir in remaining berries
- Cool to room temperature
- Beat the cream cheese confectioners sugar and vanilla in a bowl until blended
- Spread over bottom of pie crust Cover with berry mixture
- Refrigerate 2 hours or until chilled
