Norwegian Betasuppe
Ingredients
- 1 lb yellow split peas
- 1 lb ham hocks or 12 c finely chopped ham
- 1 onion finely chopped
- 1 Tbsp thyme
- 10 c water
- 2 c each potatoes diced rutabaga and celery root
- 1 12 c chopped leek
- 1 Tbsp salt
Directions
- Combine peas ham hocks or ham onion thyme and water
- Add potatoes rutabaga celery root leek and salt
- Combine ingredients in a large Dutch oven and simmer for 1 12 to 2 hours Add vegies and salt and cook for another 30 to 45 minutes
- If using ham hocks remove trim cut finely and return to the soup
