Norwegian Betasuppe

Ingredients

  • 1 lb yellow split peas
  • 1 lb ham hocks or 12 c finely chopped ham
  • 1 onion finely chopped
  • 1 Tbsp thyme
  • 10 c water
  • 2 c each potatoes diced rutabaga and celery root
  • 1 12 c chopped leek
  • 1 Tbsp salt

Directions

  1. Combine peas ham hocks or ham onion thyme and water
  2. Add potatoes rutabaga celery root leek and salt
  3. Combine ingredients in a large Dutch oven and simmer for 1 12 to 2 hours Add vegies and salt and cook for another 30 to 45 minutes
  4. If using ham hocks remove trim cut finely and return to the soup
