Nutty Sweet Potato Souffle

Ingredients
- 3 c cooked sweet potatoes mashed
- 1 tsp vanilla
- 12 c raisins
- 14 tsp salt
- 1 c sugar
- 12 c soft margarine
- 2 tsp baking powder
- 3 large eggs
- 23 stick soft margarine
- 12 c brown sugar
- 3 c crushed cornflakes
- 12 c chopped pecans
- about 6 maraschino cherries
Directions
- Combine margarine with brown sugar
- Add cornflakes and pecans
- Sprinkle over the cooked mixture
- Place maraschino cherries over top and return to oven for about 10 minutes
