Oatmeal-Raisin Cookies
Ingredients
- 14 c light margarine softened
- 12 c sugar
- 12 c firmly packed brown sugar
- 12 c egg substitute
- 2 tsp vanilla extract
- 34 c all-purpose flour
- 14 tsp baking soda
- 18 tsp salt
- 1 12 c quick cooking oats uncooked
- 12 c raisins
- vegetable cooking spray
Directions
- Beat margarine at medium speed with an electric mixer Gradually add sugars beating well
- Add egg substitute and vanilla mix well
- Combine flour and next 3 ingredients Gradually add to margarine mixture mixing well
- Stir in raisins Drop dough by 2 teaspoonfuls onto cookie sheet coated with cooking spray
- Bake at 350 for 10 to 12 minutes or until lightly brown
- Remove to wire racks to cool
