Oatmeal-Raisin Muffins

Ingredients

  • 1 c sifted all-purpose flour
  • 3 tsp baking powder
  • 14 c shortening
  • 1 c quick cooking rolled oats
  • 1 egg or 2 egg whites
  • 1 c milk
  • 12 c brown sugar
  • 12 c raisins
  • 14 c granulated sugar
  • 14 tsp ground cinnamon
  • 12 tsp salt

Directions

  1. Sift together flour baking powder and salt
  2. Cut in shortening until mixture is like coarse crumbs
  3. Stir in rolled oats
  4. Combine egg milk and brown sugar beat well
  5. Stir into dry ingredients add raisins
  6. Spoon into paper baking cups in muffin pans
  7. Combine granulated sugar and cinnamon sprinkle over batter
  8. Bake in a 425 oven for 15 to 20 minutes
  9. Makes 12 muffins
