Oatmeal-Raisin Muffins
Ingredients
- 1 c sifted all-purpose flour
- 3 tsp baking powder
- 14 c shortening
- 1 c quick cooking rolled oats
- 1 egg or 2 egg whites
- 1 c milk
- 12 c brown sugar
- 12 c raisins
- 14 c granulated sugar
- 14 tsp ground cinnamon
- 12 tsp salt
Directions
- Sift together flour baking powder and salt
- Cut in shortening until mixture is like coarse crumbs
- Stir in rolled oats
- Combine egg milk and brown sugar beat well
- Stir into dry ingredients add raisins
- Spoon into paper baking cups in muffin pans
- Combine granulated sugar and cinnamon sprinkle over batter
- Bake in a 425 oven for 15 to 20 minutes
- Makes 12 muffins
