Oatmeal Blueberry Muffins

Ingredients

  • 1 14 c all-purpose flour
  • 1 c 3-Minute oats
  • 12 c sugar
  • 1 tsp baking powder
  • 12 tsp baking soda
  • 14 tsp salt
  • 1 egg slightly beaten
  • 12 c water
  • 12 c vegetable oil
  • 1 c blueberries
  • 1 tsp vanilla
  • 2 Tbsp sugar
  • 14 tsp cinnamon

Directions

  1. In large bowl stir together flour oats sugar baking powder soda and salt set aside
  2. In a small bowl mix egg water and oil add all at once to oat mixture stirring just until moistened
  3. Stir in blueberries
  4. Spoon into greased or lined muffin cups 23 full
  5. Blend 2 tablespoons sugar and cinnamon sprinkle over the batter in each muffin cup
  6. Bake at 400 for 18 to 20 minutes
  7. Makes 1 dozen
  8. Muffins freeze well
  9. Microwave for a quick breakfast
