Oatmeal Blueberry Muffins
Ingredients
- 1 14 c all-purpose flour
- 1 c 3-Minute oats
- 12 c sugar
- 1 tsp baking powder
- 12 tsp baking soda
- 14 tsp salt
- 1 egg slightly beaten
- 12 c water
- 12 c vegetable oil
- 1 c blueberries
- 1 tsp vanilla
- 2 Tbsp sugar
- 14 tsp cinnamon
Directions
- In large bowl stir together flour oats sugar baking powder soda and salt set aside
- In a small bowl mix egg water and oil add all at once to oat mixture stirring just until moistened
- Stir in blueberries
- Spoon into greased or lined muffin cups 23 full
- Blend 2 tablespoons sugar and cinnamon sprinkle over the batter in each muffin cup
- Bake at 400 for 18 to 20 minutes
- Makes 1 dozen
- Muffins freeze well
- Microwave for a quick breakfast
