Oatmeal Bread

Ingredients

  • 2 pkg active dry yeast
  • 12 c warm water
  • 1 12 c boiling water
  • 1 c quick cooking rolled oats
  • 12 c honey
  • 13 c shortening
  • 1 tsp salt
  • 6 14 c sifted all-purpose flour
  • 2 slightly beaten eggs

Directions

  1. Soften active dry yeast in warm water
  2. In large pan combine boiling water rolled oats honey shortening and salt
  3. Cool to lukewarm
  4. Stir in 2 cups of the flour add eggs and beat well Add remaining flour 2 cups at a time mixing vigorously after each addition to make moderately stiff dough
  5. Knead on lightly floured surface until smooth and elastic
  6. Place in lightly greased bowl turning once to grease surface
  7. Cover
  8. Let rise in warm place until double
  9. Punch down knead
  10. Shape into loaves
  11. Place in greased 8 12 x 4 12 x 2 12-inch loaf pans
  12. Cover
  13. Let double in warm place
  14. Bake at 375 about 40 minutes
  15. Makes 2 loaves
