Oatmeal Cookies With Dried Cranberries And Apricots

Ingredients

  • 12 c 1 stick butter or margarine softened
  • 13 c each granulated sugar and light brown sugar packed
  • 1 large egg or egg substitute
  • 2 tsp vanilla
  • 23 c all-purpose flour
  • 12 tsp baking soda
  • 12 tsp salt optional
  • 1 c rolled oats
  • 34 c each dried cranberries and apricots snipped into bits

Directions

  1. Put rack in center of oven
  2. Heat oven to 350
  3. Lightly grease baking sheet
  4. Cream butter or margarine and sugar with an electric mixer or food processor fitted with a metal blade
  5. Add egg and vanilla
  6. Mix until smooth
  7. Add flour baking soda salt and oats
  8. Mix until just combined
  9. Stir in cranberries and apricots
  10. Drop batter by tablespoon onto a prepared baking sheet spacing cookies 2 12-inches apart
  11. They spread considerably Bake until cookies are a medium brown about 11 minutes
  12. Let cool 1 minute on cookie sheet
  13. Use metal spatula to transfer to wire rack to cool completely
