Oatmeal Cookies With Dried Cranberries And Apricots
Ingredients
- 12 c 1 stick butter or margarine softened
- 13 c each granulated sugar and light brown sugar packed
- 1 large egg or egg substitute
- 2 tsp vanilla
- 23 c all-purpose flour
- 12 tsp baking soda
- 12 tsp salt optional
- 1 c rolled oats
- 34 c each dried cranberries and apricots snipped into bits
Directions
- Put rack in center of oven
- Heat oven to 350
- Lightly grease baking sheet
- Cream butter or margarine and sugar with an electric mixer or food processor fitted with a metal blade
- Add egg and vanilla
- Mix until smooth
- Add flour baking soda salt and oats
- Mix until just combined
- Stir in cranberries and apricots
- Drop batter by tablespoon onto a prepared baking sheet spacing cookies 2 12-inches apart
- They spread considerably Bake until cookies are a medium brown about 11 minutes
- Let cool 1 minute on cookie sheet
- Use metal spatula to transfer to wire rack to cool completely
