Oatmeal Icebox CookiesMakes About 7 Dozen

Ingredients

  • 1 12 c flour
  • 12 tsp salt
  • 1 tsp baking soda
  • 1 tsp ginger
  • 1 c soft butter or margarine
  • 1 c granulated sugar
  • 1 c dark brown sugar
  • 2 eggs
  • 3 c quick rolled oats
  • 1 c walnuts chopped fine

Directions

  1. In a large bowl of mixer cream butter
  2. Add vanilla and both sugars
  3. Beat until light and fluffy
  4. Add eggs one at a time beating well after each
  5. At low speed gradually mix in flour mixture then oats
  6. Mix just to blend Stir in nuts
  7. Divide dough in half
  8. Place each half on waxed paper and shape into 10 x 3 x 1 12-inch oblong
  9. Wrap and chill in freezer for 2 hours in fridge overnight
  10. When ready to bake preheat oven to 350 and grease cookie sheets Unroll first roll of dough from waxed paper With serrated knife slice 14-inch slices
  11. Place 2-inches apart on sheet
  12. Bake 10 to 12 minutes or until browned at 350
  13. Cool slightly
  14. Remove to rack and cool completely
  15. Store in airtight containers
