Oatmeal Icebox CookiesMakes About 7 Dozen
Ingredients
- 1 12 c flour
- 12 tsp salt
- 1 tsp baking soda
- 1 tsp ginger
- 1 c soft butter or margarine
- 1 c granulated sugar
- 1 c dark brown sugar
- 2 eggs
- 3 c quick rolled oats
- 1 c walnuts chopped fine
Directions
- In a large bowl of mixer cream butter
- Add vanilla and both sugars
- Beat until light and fluffy
- Add eggs one at a time beating well after each
- At low speed gradually mix in flour mixture then oats
- Mix just to blend Stir in nuts
- Divide dough in half
- Place each half on waxed paper and shape into 10 x 3 x 1 12-inch oblong
- Wrap and chill in freezer for 2 hours in fridge overnight
- When ready to bake preheat oven to 350 and grease cookie sheets Unroll first roll of dough from waxed paper With serrated knife slice 14-inch slices
- Place 2-inches apart on sheet
- Bake 10 to 12 minutes or until browned at 350
- Cool slightly
- Remove to rack and cool completely
- Store in airtight containers
