Oatmeal Muffins
Ingredients
- 2 12 c quick oats
- 12 c brown sugar
- 2 tsp baking powder
- 12 tsp salt
- 12 tsp cinnamon
- 1 c blueberries fresh or frozen
- 23 c skim milk
- 3 Tbsp vegetable oil
- 2 egg whites slightly beaten
Directions
- Blend oats in blender or food processor 1 minute
- Combine ground oats sugar baking powder salt and cinnamon
- Add blueberries milk oil and egg whites
- Mix until dry ingredients are moistened
- Fill lined muffin cups almost full
- Bake 20 to 22 minutes at 400
- Makes 1 dozen
