Oatmeal Muffins

Ingredients

  • 2 12 c quick oats
  • 12 c brown sugar
  • 2 tsp baking powder
  • 12 tsp salt
  • 12 tsp cinnamon
  • 1 c blueberries fresh or frozen
  • 23 c skim milk
  • 3 Tbsp vegetable oil
  • 2 egg whites slightly beaten

Directions

  1. Blend oats in blender or food processor 1 minute
  2. Combine ground oats sugar baking powder salt and cinnamon
  3. Add blueberries milk oil and egg whites
  4. Mix until dry ingredients are moistened
  5. Fill lined muffin cups almost full
  6. Bake 20 to 22 minutes at 400
  7. Makes 1 dozen
