Oatmeal Nut BreadMakes 3 Loaves
Ingredients
- 9 c unsifted flour about
- 2 tsp salt
- 2 pkg dry yeast
- 1 c water
- 12 c milk
- 12 c molasses
- 12 c margarine
- 2 eggs at room temperature
- 2 c cooked old-fashioned oatmeal
- 1 c chopped pecans
Directions
- Combine 2 cups flour salt and undissolved yeast
- Heat water milk molasses and margarine over low heat until liquids are 120 to 130
- Add to dry ingredients beat 2 minutes at medium speed scraping bowl occasionally
- Add eggs oatmeal and 1 cup flour Beat at high speed 2 minutes
- Stir enough flour to make a stiff dough
- Turn into floured board knead 8 to 10 minutes
- Place in greased bowl grease top
- Cover and let rise until doubled about 1 hour
- Punch down knead in pecans
- Divide into 3 equal pieces shape into loaves
- Place in 3 greased 8 14 x 4 12 x 2 12-inch loaf pans
- Cover and let rise until doubled about 1 hour
- Bake at 400 for 30 minutes
- Remove from pans cool on wire racks
