Oatmeal Nut BreadMakes 3 Loaves

Ingredients

  • 9 c unsifted flour about
  • 2 tsp salt
  • 2 pkg dry yeast
  • 1 c water
  • 12 c milk
  • 12 c molasses
  • 12 c margarine
  • 2 eggs at room temperature
  • 2 c cooked old-fashioned oatmeal
  • 1 c chopped pecans

Directions

  1. Combine 2 cups flour salt and undissolved yeast
  2. Heat water milk molasses and margarine over low heat until liquids are 120 to 130
  3. Add to dry ingredients beat 2 minutes at medium speed scraping bowl occasionally
  4. Add eggs oatmeal and 1 cup flour Beat at high speed 2 minutes
  5. Stir enough flour to make a stiff dough
  6. Turn into floured board knead 8 to 10 minutes
  7. Place in greased bowl grease top
  8. Cover and let rise until doubled about 1 hour
  9. Punch down knead in pecans
  10. Divide into 3 equal pieces shape into loaves
  11. Place in 3 greased 8 14 x 4 12 x 2 12-inch loaf pans
  12. Cover and let rise until doubled about 1 hour
  13. Bake at 400 for 30 minutes
  14. Remove from pans cool on wire racks
