Okra Seafood Gumbo

Ingredients

  • 6 hard shell crabs
  • 2 lb okra
  • 4 Tbsp bacon fat
  • 2 Tbsp flour
  • 1 c onion chopped
  • 12 c green onion chopped
  • 1 clove garlic finely chopped
  • 1 green pepper chopped
  • 1 c cooked ham diced
  • 1 11 oz can tomatoes
  • 2 lb raw shrimp
  • 6 c water
  • 1 tsp salt
  • pinch of pepper
  • 5 dashes Tabasco sauce
  • 1 bay leaf
  • 12 tsp thyme

Directions

  1. Boil crabs until they turn red about 20 minutes Set aside and reserve water
  2. Wash okra and cut into 14-inch rounds
  3. Put 2 tablespoons of bacon fat in an iron skillet and fry okra stirring often to prevent burning until it is browned and dried out with all trace of sliminess gone
