OlaS Irish Potato Cake

Ingredients

• 2 c sugar
• 23 c butter
• 1 c warm mashed potatoes
• 1 oz unsweetened chocolate
• 2 c flour
• 2 tsp baking powder
• 12 tsp salt
• 12 c buttermilk
• 1 c chopped walnuts
• 1 tsp cloves
• 1 tsp cinnamon
• 1 tsp nutmeg
• 1 tsp vanilla
• 4 eggs separated

Directions

1. Mix together sugar and butter
2. Stir in chocolate and mashed potatoes
3. Mix in flour baking powder and salt
4. Stir in buttermilk walnuts spices and vanilla
5. Beat egg whites and fold into mixture
6. Pour mixture into baking pan and bake at 350 for 35 to 40 minutes
7. Let cool
8. Serves 8 to 10
