Old-Fashioned Banana-Pineapple Cake

Ingredients

• 3 c cake flour
• 2 c sugar
• 1 c chopped walnuts optional
• 1 12 c mashed ripe bananas
• 34 c vegetable oil
• 1 tsp baking soda
• 1 tsp salt
• 1 tsp ground cinnamon
• 1 tsp vanilla
• 3 eggs
• 1 8 oz can crushed pineapple undrained

Directions

1. Heat oven to 350
2. Grease and flour 2 round 9-inch pans or 1 13 x 9-inch pan
3. Beat all ingredients in a large bowl on medium speed for 2 minutes
4. Scrape bowl occasionally
5. Pour into pans and bake 35 to 40 minutes or until wooden toothpick inserted comes out clean
6. Cool 10 minutes and remove from pans
7. Cool completely
8. Frost cake
