Old-Fashioned Beef Stew

Ingredients

  • 2 lb chuck or bottom round
  • 1 Tbsp cooking oil
  • seasoned flour to coat meat
  • 1 qt hot water
  • 1 c diced potatoes
  • 1 c diced turnips
  • 1 c diced carrots
  • 12 c diced parsnips
  • 1 c diced celery
  • 1 green pepper diced
  • 12 c diced onion or 8 small onions
  • 1 Tbsp salt
  • 2 beef bouillon cubes

Directions

  1. Cut meat in 2-inch pieces
  2. Roll meat in seasoned flour salt and pepper
  3. Brown thoroughly in cooking oil
  4. Cover with hot water
  5. Simmer for 2 hours adding water if necessary
  6. Add vegetables and cook until tender about 30 minutes
  7. If desired thicken liquid for gravy
  8. The flavor gets better each time the stew is reheated
  9. Makes 12 servings
