Old-Style Pineapple Pudding

Ingredients

• 13 c cornstarch
• 14 c sugar
• 12 tsp salt
• 12 c cold water
• 2 14 c pineapple juice and water
• 1 Tbsp lemon juice
• 1 c crushed pineapple
• 3 egg whites beaten

Directions

1. Mix cornstarch sugar and salt and dilute with cold water pineapple juice and boiling water
2. Cook in double boiler stirring constantly until mixture thickens
3. Cool slightly add lemon juice pineapple and beaten egg whites and pour in molds to chill and set
4. Serve with custard or whipped cream
