Old Fashioned Cornbread Dressing

Ingredients

  • 2 c cornmeal
  • 1 tsp baking soda
  • 2 eggs beaten
  • 2 Tbsp bacon drippings melted
  • 1 medium onion chopped
  • 6 slices day old bread
  • 1 c milk
  • 1 tsp salt
  • 12 tsp pepper
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 c buttermilk
  • 3 stalks celery chopped
  • 2 Tbsp butter or margarine
  • 2 to 2 12 c chicken broth
  • 2 eggs beaten
  • 1 tsp poultry seasoning

Directions

  1. Combine cornmeal baking powder baking soda and salt in a large mixing bowl
  2. Add 2 eggs buttermilk and bacon drippings Mix well
  3. Place a well-greased 10-inch cast-iron skillet in oven at 450 for 4 to 5 minutes or until hot
  4. Pour batter into skillet Bake at 450 for 35 minutes or until lightly browned
  5. Cool and crumble cornbread into large bowl
