Old Fashioned Light Bread

Ingredients

  • 7 12 c all-purpose flour
  • 2 pkg dry yeast
  • 2 14 c milk
  • 12 c shortening
  • 14 c sugar
  • 2 tsp salt

Directions

  1. In a large mixer bowl combine 3 cups flour and yeast
  2. In saucepan heat milk shortening sugar and salt just until warm and shortening is almost melted stir constantly Add to flour mixture Beat at low speed 12 minute scraping sides of bowl Beat 3 minutes at high speed Gradually stir in as much flour as you can mix with a spoon
  3. Turn out onto lightly floured surface Knead in enough of the remaining flour to make a moderately stiff dough that is smooth and elastic Shape into a ball
  4. Place in a lightly greased bowl at least twice as
  5. large as the ball of dough
  6. Turn dough over once to grease surface Cover with slightly damp cloth Allow to rise in warm place until double in size about 1 hour
