OlethaS Hominy

Ingredients

  • 1 large can white hominy
  • 1 large can yellow hominy
  • 1 pt sour cream
  • 1 can Ortega chilies chopped
  • 12 medium onion grated
  • 3 strips bacon fried and crumbled
  • 4 oz Cheddar cheese grated
  • 4 oz Monterey Jack cheese grated
  • 12 c butter 1 stick
  • 1 large onion minced
  • 1 12 lb mushrooms sliced thin
  • 2 large cloves garlic minced
  • 4 eggs
  • 1 c milk
  • 6 slices egg bread 14-inch cubes white bread is okay
  • salt and pepper
  • pinch of nutmeg
  • pinch of chili powder

Directions

  1. Melt butter in large skillet over medium heat
  2. Add onion and saute about 5 minutes until tender
  3. Add mushrooms and garlic and saute about 3 minutes
  4. Remove from heat
  5. In a bowl combine eggs and milk add bread and blend in seasonings
  6. Add mushroom mixture and stir gently
  7. Taste and adjust seasoning
  8. Spoon into baking dish
  9. Bake at 350 for about 1 hour
