OlethaS Hominy
Ingredients
- 1 large can white hominy
- 1 large can yellow hominy
- 1 pt sour cream
- 1 can Ortega chilies chopped
- 12 medium onion grated
- 3 strips bacon fried and crumbled
- 4 oz Cheddar cheese grated
- 4 oz Monterey Jack cheese grated
- 12 c butter 1 stick
- 1 large onion minced
- 1 12 lb mushrooms sliced thin
- 2 large cloves garlic minced
- 4 eggs
- 1 c milk
- 6 slices egg bread 14-inch cubes white bread is okay
- salt and pepper
- pinch of nutmeg
- pinch of chili powder
Directions
- Melt butter in large skillet over medium heat
- Add onion and saute about 5 minutes until tender
- Add mushrooms and garlic and saute about 3 minutes
- Remove from heat
- In a bowl combine eggs and milk add bread and blend in seasonings
- Add mushroom mixture and stir gently
- Taste and adjust seasoning
- Spoon into baking dish
- Bake at 350 for about 1 hour
