Olive Souffle Casserole

Ingredients

  • 12 lb Italian sausage parboiled and sliced
  • 1 c sliced onion
  • 14 c olive or salad oil
  • 4 medium potatoes cooked peeled and diced
  • 12 c sliced pimento stuffed green olives
  • 1 16 oz can stewed tomatoes
  • 6 egg yolks beaten
  • 6 egg whites stiffly beaten

Directions

  1. Saute sausage and onion in 1 tablespoon oil in large skillet until lightly browned
  2. Remove to shallow 2 12-quart casserole dish
  3. Heat remaining oil in skillet
  4. Add potatoes
  5. Saute for 3 minutes
  6. Add olives and tomatoes mix well
  7. Pour over sausage mixture
  8. Bake at 400 for 15 minutes
  9. Fold egg yolks into whites
  10. Stir potato mixture and pour eggs over top
  11. Bake 17 minutes longer or until eggs test done when toothpick is inserted in center and comes out clean
