Omelette Aux Fines Herbes

Ingredients

  • 6 large eggs
  • 14 tsp salt
  • 14 tsp pepper
  • 14 c butter or oleo
  • 1 Tbsp finely chopped fresh basil
  • 1 Tbsp finely chopped fresh parsley
  • 1 Tbsp finely chopped fresh chives

Directions

  1. Whisk together first three ingredients
  2. Heat an omelet pan over medium heat
  3. Add butter coating bottom of pan
  4. Pour egg mixture into pan
  5. As it cooks gently lift the edges of the omelet with a spatula tilting pan to allow the uncooked portion to flow underneath the cooked portion
  6. Sprinkle herbs over omelet
  7. Fold in half transfer to plate
  8. Use parsley for garnish if desired Makes 4 servings
