Omelette Aux Fines Herbes
Ingredients
- 6 large eggs
- 14 tsp salt
- 14 tsp pepper
- 14 c butter or oleo
- 1 Tbsp finely chopped fresh basil
- 1 Tbsp finely chopped fresh parsley
- 1 Tbsp finely chopped fresh chives
Directions
- Whisk together first three ingredients
- Heat an omelet pan over medium heat
- Add butter coating bottom of pan
- Pour egg mixture into pan
- As it cooks gently lift the edges of the omelet with a spatula tilting pan to allow the uncooked portion to flow underneath the cooked portion
- Sprinkle herbs over omelet
- Fold in half transfer to plate
- Use parsley for garnish if desired Makes 4 servings
