Onion-Roasted Potatoes1993 TasterS Luncheon

Ingredients

  • 1 envelope onion-mushroom recipe soup mix
  • 2 lb all-purpose potatoes cut into large chunks
  • 13 c extra light olive oil

Directions

  1. Preheat oven to 450
  2. In a large plastic bag or bowl add all ingredients
  3. Close bag and shake or toss in bowl until potatoes are evenly coated Empty potatoes into shallow baking or roasting pan
  4. Discard bag
  5. Bake stirring occasionally 40 minutes or until potatoes are tender and golden brown Garnish if desired with chopped fresh parsley
  6. Makes 8 servings
