Onions Au Gratin

Ingredients

  • 6 medium yellow onions
  • 12 c beef broth low salt
  • 2 Tbsp flour
  • 18 tsp pepper
  • 14 c butter or margarine
  • 12 c whipping cream
  • 12 c Swiss cheese shredded
  • 12 c grated Parmesan cheese

Directions

  1. Slice onions into 12-inch thick rings
  2. Saut in butter until tender
  3. Place in greased 8-inch square baking dish
  4. In a bowl stir the broth cream flour and pepper until smooth
  5. Pour over onions
  6. Sprinkle with the cheeses
  7. Bake uncovered at 350 for approximately 30 minutes or until cheese is golden brown and mixture is bubbly
  8. Makes approximately 8 servings
