Open-Faced Chicken Sandwiches
Ingredients
- 2 12 c diced cooked chicken
- 1 12 c diced celery
- 12 tsp salt
- 2 tsp grated onion
- 34 c mayonnaise
- 1 Tbsp lemon juice
- 8 buns
- butter
- 12 c American cheese shredded
- 1 c crushed corn chips
Directions
- Combine chicken and celery
- Mix salt onion mayonnaise and lemon juice Mix into chicken
- Split buns
- Place cut side down on broiler rack
- Brown lightly Turn and butter cut side Spread each with 14 cup chicken mixture Toss cheese and corn chips together
- Sprinkle over chicken
- Broil 3-inches from heat until cheese is melted and slightly browned
- Place on tray garnish
