Opossum Pea Soup

Ingredients

  • 1 opossum breast and meaty legs
  • 14 lb diced salt pork
  • 2 medium diced onions
  • 1 lb split peas
  • 1 carrot chopped
  • 12 tsp tarragon
  • salt
  • pepper

Directions

  1. Soak peas overnight
  2. Drain and cover with 2 quarts cold water
  3. Add rest of ingredients and simmer for 1 to 1 12 hours until everything is tender
  4. Serve hot with oyster crackers
