Orange-Glazed Sweet Potatoes
Ingredients
- 6 to 8 medium-size sweet potatoes
- 2 Tbsp grated orange rind
- 1 c orange juice or Five Alive juice
- 13 c firmly packed brown sugar
- 13 c sugar
- 1 Tbsp cornstarch
- 3 Tbsp butter or margarine melted
- 14 tsp salt optional
Directions
- Cook sweet potatoes in boiling water until tender
- Allow to cool to touch peel and slice
- Arrange slices in a 3-quart baking dish
- Combine remaining ingredients in a small saucepan
- Cook stirring constantly until thickened
- Pour glaze over sweet potatoes let set in glaze for awhile or overnight the longer it sets the better
- Bake uncovered at 350 for 30 minutes
- Serves 10 to 12
