Orange-Honey Cake

Ingredients

  • 1 6 oz can frozen orange juice concentrate undiluted
  • 1 c honey
  • 1 c strong black coffee
  • 4 eggs
  • 2 Tbsp salad oil
  • 1 c sugar
  • 3 12 c sifted flour
  • 14 tsp salt
  • 2 tsp baking powder
  • 1 tsp soda
  • 1 tsp allspice
  • 1 tsp cinnamon

Directions

  1. Combine concentrate honey and coffee
  2. Beat eggs until light add oil and sugar gradually
  3. Beat Sift dry ingredients together Add egg mixture alternately with orange mixture
  4. Mix until smooth
  5. Pour into 2 greased 9 x 5 x 3-inch loaf pans
  6. Bake at 325 for 1 hour and 10 minutes or until done
  7. Cool remove from pans
  8. Makes 2 loaf cakes
  9. Best if let set for 2 days before serving
