Orange-Raisin Fruitcake
Ingredients
- 1 orange extract juice and reserve
- 1 12 c raisins
- 12 c nuts I use peanuts
- 12 c vegetable shortening
- 1 c sugar
- 2 eggs unbeaten
- 2 c flour
- 1 tsp soda
- 12 tsp salt
- 1 c buttermilk
Directions
- Extract orange juice then put orange pulp rind nuts and raisins through food chopper
- Keep 14 cup of nut mixture for topping
- Mix remainder with orange juice sugar and shortening until light and fluffy
- Add eggs Mix
- Add flour soda salt and buttermilk
- Mix well and pour into a tube pan
- Bake 45 minutes at 350
