Orange-Raisin Fruitcake

Ingredients

• 1 orange extract juice and reserve
• 1 12 c raisins
• 12 c nuts I use peanuts
• 12 c vegetable shortening
• 1 c sugar
• 2 eggs unbeaten
• 2 c flour
• 1 tsp soda
• 12 tsp salt
• 1 c buttermilk

Directions

1. Extract orange juice then put orange pulp rind nuts and raisins through food chopper
2. Keep 14 cup of nut mixture for topping
3. Mix remainder with orange juice sugar and shortening until light and fluffy
4. Add eggs Mix
5. Add flour soda salt and buttermilk
6. Mix well and pour into a tube pan
7. Bake 45 minutes at 350
