Orange Pork Tenderloin

Ingredients

  • 1 whole pork tenderloin
  • 1 Tbsp butter softened
  • 14 tsp dried thyme crushed
  • dash of cayenne pepper
  • 34 to 1 c orange juice
  • 1 Tbsp flour
  • 1 tsp aromatic bitters

Directions

  1. Mix butter thyme and cayenne pepper Spread evenly over tenderloin
  2. Place tenderloin in shallow roasting pan and pour 34 cup orange juice over meat
  3. Roast in a 375 oven for 25 to 30 minutes to 155 to 160 on meat thermometer basting occasionally Remove meat to serving platter
  4. Keep warm
  5. Measure basting liquid into small saucepan adding additional orange juice if necessary to make 34 cup
  6. Quickly whisk in flour sugar and butter Cook and stir until mixture boils and thickens Cut tenderloin in 1-inch slices and serve with sauce
  7. Makes 4 servings
