Orange Praline Yams Casserole

Ingredients

  • 5 lb canned yams drained
  • 23 c orange juice
  • 1 Tbsp grated orange peel
  • 5 Tbsp brandy
  • 2 tsp salt
  • ground pepper
  • 1 tsp ground ginger
  • 1 c melted butter
  • 1 c light brown sugar
  • 3 egg yolks
  • 1 c chopped pecans
  • 1 tsp ground cinnamon

Directions

  1. In a mixing bowl with electric mixer beat yams until smooth Add orange juice and peel brandy salt pepper to taste ginger 14 cup melted butter 13 cup brown sugar and egg yolks beating until mixture is light and fluffy
  2. Pour into buttered shallow 2-quart casserole
  3. In a small bowl combine remaining melted butter remaining brown sugar pecans and cinnamon
  4. Spread evenly over yams at this point casserole may be refrigerated overnight Bake at 350 for 45 to 50 minutes or until golden brown and bubbly
  5. Let stand 10 minutes before serving
  6. Serves 10 to 12
