Orange Roughy De Jonghe

Ingredients

  • 3 orange roughy fillets about 1 lb
  • 2 Tbsp cooking sherry
  • 2 Tbsp mayonnaise
  • 1 clove garlic minced
  • 1 Tbsp minced parsley
  • 2 Tbsp dry bread crumbs
  • 2 Tbsp Parmesan cheese

Directions

  1. Preheat oven to 400
  2. Place fillets in a shallow buttered baking dish about 7 x 10-inch
  3. Pour sherry over fillets Combine mayonnaise garlic parsley and bread crumbs
  4. Spread evenly over fillets
  5. Sprinkle with Parmesan cheese
  6. Bake for 15 to 20 minutes or until fork-tender
