Orange Roughy De Jonghe

Ingredients
- 3 orange roughy fillets about 1 lb
- 2 Tbsp cooking sherry
- 2 Tbsp mayonnaise
- 1 clove garlic minced
- 1 Tbsp minced parsley
- 2 Tbsp dry bread crumbs
- 2 Tbsp Parmesan cheese
Directions
- Preheat oven to 400
- Place fillets in a shallow buttered baking dish about 7 x 10-inch
- Pour sherry over fillets Combine mayonnaise garlic parsley and bread crumbs
- Spread evenly over fillets
- Sprinkle with Parmesan cheese
- Bake for 15 to 20 minutes or until fork-tender
