Our Mayonnaise

Ingredients
- 1 12 c low-fat cottage cheese drained
- 1 Tbsp apple juice
- 2 Tbsp apple cider vinegar
- 1 egg white
- 2 Tbsp lemon juice
- 1 tsp Dijon mustard
- 34 tsp onion powder
- 1 tsp low-sodium soy sauce
Directions
- Place all ingredients in a food processor fitted with the metal blade
- Process 4 to 5 minutes until double in volume and very smooth and creamy
- Pour into a glass container
- Cover and refrigerate overnight
- Makes 2 12 cups
