Oven-Baked Pork Stew

Ingredients

  • 1 12 lb boneless pork cut into 1-inch cubes
  • 2 Tbsp cooking oil
  • 3 Tbsp flour
  • 1 16 oz can tomatoes cut up
  • 1 clove garlic minced
  • 1 bay leaf
  • 1 tsp sugar
  • 14 c water
  • 12 tsp salt
  • 1 tsp instant beef bouillon
  • 12 tsp dried thyme crushed
  • 12 tsp dried oregano crushed
  • 14 tsp bottled hot pepper sauce
  • 4 medium sweet potatoes peeled and sliced 34-inch thick
  • 1 large onion cut into wedges
  • 1 medium green pepper cut into strips
  • 1 10 oz pkg frozen peas thawed

Directions

  1. In a large skillet brown meat in hot oil
  2. Remove meat from skillet reserving drippings
  3. Stir flour into drippings
  4. Stir in undrained tomatoes garlic bay leaf sugar bouillon granules thyme oregano pepper sauce 14 cup water and 12 teaspoon salt Cook and stir until thickened and bubbly
