Oven Apple Pancakes

Ingredients

  • 4 eggs well beaten
  • 1 c milk
  • 14 tsp salt
  • 1 c flour
  • 12 c sugar
  • 1 Tbsp cinnamon
  • 3 tart medium apples peeled cored and cut in 14 inch wedges
  • 4 Tbsp butter
  • Whipped cream optional

Directions

  1. With whisk or beater beat eggs milk salt and flour until smooth
  2. Let the batter rest
  3. Combine the sugar and cinnamon and sprinkle over the apples toss to mix
  4. Generously butter two 9 inch pie pans using about 2 Tbsp for each pan
  5. Divide apples evenly between the pans
  6. Stir the batter and pour it over the apples using 1 c per pan
  7. Bake at 375 30-40 minutes or until pancakes are fluffed golden brown and set
  8. Serve hot in wedges topped with whipped cream
