Oven Swiss Steak

Ingredients

  • 34 lb boneless beef round steak
  • 2 Tbsp flour
  • 12 tsp salt
  • 1 8 oz can stewed tomatoes
  • 14 c chopped celery
  • 14 c chopped carrot
  • 1 Tbsp chopped onion
  • 14 tsp Worcestershire sauce
  • 2 Tbsp shredded sharp American cheese

Directions

  1. Cut meat into 2 portions
  2. Mix flour and salt pound into meat
  3. Set aside remaining flour
  4. Brown meat in small amount of hot shortening
  5. Place meat in small shallow baking dish
  6. Blend remaining flour with drippings in skillet
  7. Add remaining ingredients except cheese and cook stirring constantly until mixture boils
  8. Pour over meat
  9. Cover and bake in moderate oven 350 2 hours or until meat and vegetables are tender
  10. Sprinkle cheese over meat
  11. Return to oven for few minutes
  12. Makes 2 servings
