Oven Swiss Steak
Ingredients
- 34 lb boneless beef round steak
- 2 Tbsp flour
- 12 tsp salt
- 1 8 oz can stewed tomatoes
- 14 c chopped celery
- 14 c chopped carrot
- 1 Tbsp chopped onion
- 14 tsp Worcestershire sauce
- 2 Tbsp shredded sharp American cheese
Directions
- Cut meat into 2 portions
- Mix flour and salt pound into meat
- Set aside remaining flour
- Brown meat in small amount of hot shortening
- Place meat in small shallow baking dish
- Blend remaining flour with drippings in skillet
- Add remaining ingredients except cheese and cook stirring constantly until mixture boils
- Pour over meat
- Cover and bake in moderate oven 350 2 hours or until meat and vegetables are tender
- Sprinkle cheese over meat
- Return to oven for few minutes
- Makes 2 servings
