Oven Swiss Steak

Ingredients

  • 1 12 lb beef round steak 34-inch thick
  • 14 c plain flour
  • 1 tsp salt
  • 1 16 oz can stewed tomatoes
  • 12 c chopped celery
  • 12 c chopped carrot
  • 2 Tbsp chopped onion
  • 12 tsp Worcestershire sauce
  • 14 c shredded sharp American cheese

Directions

  1. Cut meat into 4 portions
  2. Mix flour and salt
  3. Pound into meat
  4. Set aside remaining flour
  5. Brown meat in small amount of hot shortening and place in shallow baking dish
  6. Blend remaining flour with drippings in skillet
  7. Add remaining ingredients except cheese
